With more and more people finding new reasons to swear off meat and other animal bi-products than ever before, there's no denying we're in the middle of a anti-carnivorous epidemic. 

For years, vegetarians and vegans have endured being endlessly mocked, questioned about their choices, and leaving every party with an empty stomach due to a lack of food that was direct of an animal's stomach. 

Though now, with the popularity of the lifestyle choice at an all time high, it's becoming increasingly difficult to ignorantly serve up your vegetarian a plate of meat by simply covering your ass with an, "omg, I forgot you don't eat meant... I have a bag of chips?"

Lentil Tabbouleh

  • 1 bunch of spring onions
  • 200 g ripe cherry tomatoes
  • 1 large bunch of fresh flat-leaf parsley
  • 1 large bunch of fresh mint

Baked Squash

Cooking time: 2.5 hr

Ingredients: 

  • 1 butternut squash , (1.2kg)
  • olive oil
  • 1 red onion
  • 1 clove of garlic
  • 1 bunch of fresh sage , (30g)
  • 10 sun-dried tomatoes
  • 75 g vac-packed chestnuts
  • 75 g basmati rice
  • 75 g dried cranberries
  • 1 pinch of ground allspice

Jamie Oliver's Vegan Veggie Noodles

Cooking time: 45 minutes

Ingredients: 

  • 2 green courgettes
  • 2 yellow courgettes
  • 1 large carrot
  • 2 corn cobs (kernels only)
  • 200 g fresh peas or mangetout
  • 1 large handful of mixed herbs, such as coriander, flat-leaf parsley, rosemary, oregano, thyme
  • 1 small banana shallot
  • 1 small clove of garlic
  • 3 cm piece of ginger
  • ½ a fresh green chilli
  • 5 cm piece of turmeric , or 2 tesapoons ground turmeric
  • 1 lime , plus extra to serve
  • 200 ml coconut milk
  • 300 ml coconut water
  • 100 g unsweetened desiccated coconut
  • 1 teaspoon medium-hot curry powder

Ingredients: 

  • 2 tablespoons olive oil
  • 250g firm tofu, cut into 5mm slices
  • 1 brown onion, finely chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1/2 teaspoon chilli flakes
  • 400g can diced tomatoes
  • 6 corn tortillas
  • 60g rocket leaves
  • 1/3 cup coriander leaves
  • 1/4 cup (60g) drained pickled jalapeño chilli (optional)
  • Lime wedges, to serve

  • 3 plain rice cakes (approx 25g)
  • 50g shelled hazelnuts
  • 50g rice flour
  • 1/2 tsp baking powder (can be gluten free)
  • 3 tbsp olive oil
  • 2 tbsp soya milk
  • 450g sweet potatoes
  • Zest of 1/2 an unwaxed lemon
  • 2 tbsp finely chopped fresh sage
  • Salt and pepper, to taste
  • 3 large red onions
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp finely chopped fresh thyme
  • Zest of 1/2 an unwaxed lemon
  • A few whole hazelnuts and fresh cranberries
  • 3 tbsp cranberry sauce
  • Finely chopped sage, to garnish

  • 1 tsp cinnamon

  • 50g vegan chocolate chips
  • 25g dried cranberries
  • 25g sultanas
  • 2 unwaxed tangerines
  • 50g caster sugar

Cooking time: 5 minutes! 

Ingredients

  • 3/4 cup cashews (soaked and drained for 30 minutes)
  • 6 medjool dates (pitted)
  • 1 tsp vanilla
  • Pinch of salt
  • 1 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2.5 cups of water
  • Optional: 2-3 shots of rum

  • 1 1/2 cups soy milk
  • 2 tsp apple cider vinegar
  • 2 cups self-raising flour
  • 2 tsp ground vanilla
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 cup rice malt syrup or liquid sweetener of your choice
  • 1/3 cup melted coconut oil
  • 2 cups frozen raspberries
  • 1 1/2 tbs chia seeds (optional if unable to find chia seeds)
  • 1 tbs maple syrup or liquid sweetener of your choice
  • 1 cup coconut cream
  • 1/2 cup cacao/cocoa powder
  • 1/2 cup maple syrup or liquid sweetener of your choice
  • 2 cups desiccated or shredded coconut
